  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 8 oz cream cheese, softened
  • 1/2 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with coconut oil or line it with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, granulated erythritol, cocoa powder, baking powder, and salt until combined.
  3. In another bowl, whisk together the eggs, almond milk, and melted coconut oil. Gradually pour the wet ingredients into the dry mixture, stirring until just combined. Be careful not to overmix.
  4. In a separate bowl, beat the softened cream cheese with powdered erythritol and vanilla extract until smooth and creamy.
  5. Pour half of the cake batter into the greased baking dish, spoon the cream cheese mixture on top, then pour the remaining batter over it and create a swirling effect with a knife.
  6. Optionally, sprinkle chocolate chips and chopped nuts over the top.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted comes out clean. Allow the cake to cool in the pan for about 10 minutes before slicing.
