- 1 lb Ground Beef
- 1 Medium Onion, diced
- 2 cloves Garlic, minced
- 4 cups Beef Broth
- 1 cup Heavy Cream
- 1 cup Shredded Cheddar Cheese
- 1 cup Cauliflower, chopped
- 1 tsp Worcestershire Sauce
- Salt and Pepper to taste
- Bacon Bits (optional, for garnish)
- Green Onions (optional, for garnish)
Instructions
- In a large pot over medium heat, brown the ground beef with diced onion and minced garlic. Drain excess fat.
- Add beef broth and bring to a boil.
- Stir in chopped cauliflower and Worcestershire sauce. Simmer for about 10 minutes until the cauliflower is tender.
- Reduce heat to low, stir in heavy cream and cheddar cheese until melted and combined. Season with salt and pepper to taste.
Notes
For a leaner soup, substitute ground beef with ground turkey or chicken. Leftovers can be stored for quick lunches.
