Ingredients

  • 1 Medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 cup Heavy Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Cauliflower, chopped
  • 1 tsp Worcestershire Sauce
  • Salt and Pepper to taste
  • Bacon Bits (optional, for garnish)
  • Green Onions (optional, for garnish)

Instructions

  1. In a large pot over medium heat, brown the ground beef with diced onion and minced garlic. Drain excess fat.
  2. Add beef broth and bring to a boil.
  3. Stir in chopped cauliflower and Worcestershire sauce. Simmer for about 10 minutes until the cauliflower is tender.
  4. Reduce heat to low, stir in heavy cream and cheddar cheese until melted and combined. Season with salt and pepper to taste.

Notes

For a leaner soup, substitute ground beef with ground turkey or chicken. Leftovers can be stored for quick lunches.
