Instructions
- Begin by hard boiling the eggs. Place the eggs in a saucepan and cover them with water, ensuring there’s about an inch of water above the eggs. Bring the water to a boil, then cover and remove from heat. Let the eggs sit for 12 minutes.
- Once the eggs have finished cooking, cool them in a bowl of cold water for a few minutes. Peel the eggs under running water for easier removal of the shell.
- Slice the eggs in half lengthwise and place the yolks into a mixing bowl. Mash the yolks with the mayonnaise, Dijon mustard, white vinegar, salt, pepper, and smoked paprika until smooth.
- Fill the egg whites with the creamy yolk mixture using a spoon or piping bag. Garnish with chopped chives or green onions.
- Cover and refrigerate until ready to serve. Best served chilled.
