  • 1 tablespoon ground cinnamon
  • 1/3 cup powdered sugar (for glaze)
  • 2 teaspoons milk (for glaze)

Instructions

  1. Whisk together flour, baking soda, and salt in a medium bowl.
  2. Cream softened butter with granulated and light brown sugars until light and fluffy, about 3 to 5 minutes. Beat in the egg and vanilla extract until well combined.
  3. Gradually add dry ingredients to the wet mixture, mixing until just combined. Divide the dough in half.
  4. Roll each portion of dough between parchment paper into a rectangle. Brush with melted butter and sprinkle with cinnamon and sugar. Roll each rectangle tightly into a log and chill in the refrigerator for at least 30 minutes.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Slice logs into 1/2-inch thick rounds and arrange on baking sheets.
  6. Bake for 10-12 minutes or until edges are slightly golden. Cool slightly and drizzle with glaze made from powdered sugar and milk.
