- 3/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 large egg

- 1 tablespoon ground cinnamon
- 1/3 cup powdered sugar (for glaze)
- 2 teaspoons milk (for glaze)
Instructions
- Whisk together flour, baking soda, and salt in a medium bowl.
- Cream softened butter with granulated and light brown sugars until light and fluffy, about 3 to 5 minutes. Beat in the egg and vanilla extract until well combined.
- Gradually add dry ingredients to the wet mixture, mixing until just combined. Divide the dough in half.
- Roll each portion of dough between parchment paper into a rectangle. Brush with melted butter and sprinkle with cinnamon and sugar. Roll each rectangle tightly into a log and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Slice logs into 1/2-inch thick rounds and arrange on baking sheets.
- Bake for 10-12 minutes or until edges are slightly golden. Cool slightly and drizzle with glaze made from powdered sugar and milk.
Notes
For a fun twist, try adding nuts or substituting cinnamon with pumpkin spice. Cream cheese frosting pairs nicely with these cookies for added richness.
