- 3-4 tablespoons hot water
- 2 scallions, sliced
- 1 tablespoon roasted peanuts, chopped
- 1 teaspoon sesame seeds
- Fresh cilantro, chopped (to taste)
- Lime wedges (for serving)
Instructions
- Prepare the Noodles: Cook the instant ramen noodles according to package directions. Drain the noodles, reserving 2 to 3 tablespoons of the cooking water.
- Make the Peanut Sauce: In a mixing bowl, combine the creamy peanut butter, soy sauce, chili crisp, rice vinegar, honey or maple syrup, toasted sesame oil, and minced garlic. Gradually whisk in the hot water or reserved noodle water until the sauce achieves a smooth consistency.
- Combine and Serve: Toss the cooked noodles in the prepared peanut sauce until evenly coated. Portion into bowls and garnish with scallions, chopped peanuts, sesame seeds, cilantro, and lime wedges as desired. Serve immediately.
Notes
For a gluten-free option, switch regular ramen with rice noodles or gluten-free ramen. Replace honey with maple syrup for a vegan-friendly dish.
