Instructions
Preheat waffle iron.

Separate eggs; beat egg whites to stiff peaks.
In another bowl, whisk egg yolks, buttermilk, melted butter, and vanilla.
Combine wet and dry ingredients until just mixed.
Fold in whipped egg whites gently.
Pour batter into waffle iron and cook until golden.
Serve hot with toppings of choice.
Notes
