Description

Classic Kodiak banana muffins are a healthy, protein-packed breakfast or snack option made with whole grain mix, ripe bananas, and natural sweeteners. Quick to prepare and highly customizable!


Ingredients

Scale

1 cup Kodiak Cakes Mix (whole grain, high-protein)

1/2 tsp baking powder (for extra fluffiness)

1/2 tsp cinnamon (optional)

1/4 tsp salt

2 ripe bananas, mashed

1 large egg

1/4 cup milk (dairy or dairy-free)

2 tbsp honey or maple syrup

1 tsp vanilla extract


Instructions

Preheat oven to 350°F (175°C). Line or grease a muffin tin.

Mash bananas in a bowl. Add egg, milk, honey or syrup, and vanilla. Mix well.

In another bowl, combine Kodiak mix, baking powder, cinnamon, and salt.

Fold dry ingredients into the wet mixture. Do not overmix.

Spoon batter into muffin cups (3/4 full).

Bake for 18–22 minutes, until a toothpick comes out clean.

Cool 5 min in pan, then transfer to a wire rack.

Notes

Use overripe bananas for best sweetness. Customize with chocolate chips, nuts, or fruits. Store leftovers in an airtight container.
