Ingredients

  • 1 Onion (grated)
  • 3 Garlic cloves (grated)
  • 1/4 cup Plain yogurt
  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste
  • 2 teaspoons Cumin
  • 1 tablespoon Sweet paprika
  • 2 teaspoons Oregano
  • 1/2 teaspoon Cayenne pepper (optional)
  • 2 tablespoons Tomato paste (or BBQ sauce)
  • Warm pita or large tortilla as needed
  • Shredded lettuce (or cabbage) as needed
  • Red onion (sliced) as needed
  • Pickles as needed
  • Tahini sauce (optional) as needed
  • Tzatziki (optional) as needed
  • Fresh parsley (optional) as needed

Instructions

  1. Prepare the meat mixture: In a large mixing bowl, combine the ground meat, grated onion, garlic, yogurt, tomato paste, salt, pepper, paprika, cumin, oregano, and olive oil. Mix well until the mixture becomes sticky and cohesive.
  2. Form the ‘meat sheet’: Divide the seasoned meat mixture into five equal parts. On parchment paper, place one portion and roll it out into a thin, even rectangle.
  3. Roll it up: Remove the top sheet, then starting from the long side, roll the meat into a firm log using the bottom parchment for support. Twist the ends to secure the shape.

Notes

For a vegetarian version, replace meat with beans, lentils, and grains. Marinate the meat overnight for stronger flavor.
