- 2 cups pulled rotisserie chicken
- 2 cups fajita veggies (bell peppers and onions)
- 1 can (15 oz) black beans
- 1 cup corn
- 1 cup green chile cheese sauce
- 4 large burrito-sized tortillas
- Optional toppings: sour cream, avocado, cilantro to taste
Instructions
- In a heated skillet over medium heat, sauté the fajita veggies (bell peppers and onions) until they are tender, about 5–7 minutes.
- Add the pulled rotisserie chicken, black beans, corn, and green chile cheese sauce to the skillet. Stir everything together well until heated through, about another 5 minutes.
- Warm the burrito-sized tortillas in a separate pan or microwave until they are pliable, about 30 seconds.
- Spoon the chicken mixture onto each tortilla and roll them up tightly to form burritos.
Notes
Feel free to customize the burritos with your favorite toppings or substitute the chicken for tofu for a vegetarian option.
