- 4 chicken breasts
- 2 cups spinach
- 1 cup feta cheese
- 1/2 cup sun-dried tomatoes
- 2 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat, then add minced garlic and sauté for 1-2 minutes.
- Add chopped spinach and sun-dried tomatoes, cooking until the spinach wilts, about 2-3 minutes.
- Remove from heat, mixing in crumbled feta cheese and oregano.
- Slice a pocket into each chicken breast without cutting all the way through.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
- Season the chicken breasts with salt and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes.
- Ensure the chicken reaches an internal temperature of 165°F (74°C).
- Rest the chicken for a few minutes before serving.
