  • 2 cups spinach
  • 1 cup feta cheese
  • 1/2 cup sun-dried tomatoes

  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, then add minced garlic and sauté for 1-2 minutes.
  3. Add chopped spinach and sun-dried tomatoes, cooking until the spinach wilts, about 2-3 minutes.
  4. Remove from heat, mixing in crumbled feta cheese and oregano.
  5. Slice a pocket into each chicken breast without cutting all the way through.
  6. Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
  7. Season the chicken breasts with salt and pepper.
  8. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes.
  9. Ensure the chicken reaches an internal temperature of 165°F (74°C).
