Ingredients

  • 1 lb Ground turkey
  • 2 Medium zucchinis, sliced
  • 1/2 cup Chopped onion
  • 2 cloves Minced garlic
  • 1 can (14 oz) Diced tomatoes, drained
  • 1 cup Shredded mozzarella cheese
  • 1 tsp Dried Italian herbs
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant and softened, about 2 minutes.
  4. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon, about 5 to 6 minutes.
  5. Stir in the drained diced tomatoes, dried herbs, salt, and black pepper; simmer gently for about 3 to 4 minutes.
  6. Layer half of the sliced zucchini in the prepared baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat these layers until all ingredients are used.
  7. Bake the casserole uncovered for 30 to 35 minutes, or until bubbling and the cheese is golden brown. Allow it to cool for 5 minutes before serving.

Notes

Make it gluten-free by ensuring all ingredients are labeled gluten-free. Substitute turkey with a meat alternative for a vegetarian option.
