- 1 lb ground beef (lean, 93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp homemade)
- 2 tbsp hot honey (store-bought or homemade)
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F and toss the diced sweet potatoes with 1 tablespoon of olive oil along with the paprika, garlic powder, cinnamon, salt, and pepper. Spread them evenly on a baking sheet and roast for 40–45 minutes, stirring halfway through to ensure even cooking and browning.
- In a skillet, heat the remaining olive oil over medium heat. Add the diced onion and sauté until softened, roughly 3-4 minutes. Next, add the ground beef, and season it with taco seasoning, cooking until browned and flavorful.
- Once your sweet potatoes are roasted and beef is browned, it’s time to assemble your bowls. In each bowl, layer the roasted sweet potatoes, followed by ground beef, sliced avocado, and a generous dollop of cottage cheese. Finally, drizzle hot honey over each bowl and garnish with cilantro, red pepper flakes, or a lime wedge if desired.
Notes
For a vegan-friendly option, replace ground beef with lentils and cottage cheese with cashew yogurt.
