- 1 cup Greek yogurt
- 1 cup Applesauce
- 2 Eggs
- 1 cup Sugar
- 1 teaspoon Vanilla extract
- 2 cups All-purpose flour
- 1 teaspoon Baking powder

- 1 teaspoon Cinnamon
- 1/2 teaspoon Salt
- 1 cup Diced apples
- 1/2 cup Chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the Greek yogurt, applesauce, eggs, sugar, and vanilla extract until smooth.
- Combine the flour, baking powder, baking soda, cinnamon, and salt in another bowl.
- Add the dry ingredients to the yogurt mixture and stir gently until just combined.
- Fold in the diced apples and chopped nuts, if desired.
- Fill the muffin cups evenly with the batter, about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool the muffins in the tin for a few minutes, then transfer to a wire rack.
Notes
Serve warm with honey or almond butter for a satisfying snack. Store muffins in an airtight container to keep them fresh.
