Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the Greek yogurt, applesauce, eggs, sugar, and vanilla extract until smooth.
  3. Combine the flour, baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Add the dry ingredients to the yogurt mixture and stir gently until just combined.
  5. Fold in the diced apples and chopped nuts, if desired.
  6. Fill the muffin cups evenly with the batter, about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool the muffins in the tin for a few minutes, then transfer to a wire rack.
