Ingredients

  • 8 ounces Pasta (Fusilli or Penne)
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1/2 Red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup Feta cheese, crumbled
  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, drain and rinse under cold water.
  2. Combine Your Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese.
  3. Dress the Salad: In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour this dressing over the pasta salad, tossing gently to combine.

Notes

This salad can be served immediately or chilled for about 30 minutes to meld flavors. Keep any leftovers in an airtight container in the refrigerator for up to three days.
