Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 1 pound green beans, trimmed
  • 1 medium tomato, diced
  • 1 pound baby potatoes, halved
  • Salt, to taste
  • Pepper, to taste
  • 3 tablespoons water
  • Lemon juice (optional), for serving
  • Parsley (optional), for garnish

Instructions

  1. Gather all ingredients. Wash and trim the green beans. Halve the baby potatoes and rinse them.
  2. In a large pan, heat olive oil over medium heat. Sauté the diced onion for 3-4 minutes until soft and translucent.
  3. Add halved baby potatoes and sauté for another 5 minutes, then add green beans and cook for about 5 minutes until slightly softened.
  4. Stir in diced tomato, salt, and pepper. Pour in the water, cover, and let it steam for 15-20 minutes, stirring occasionally.
  5. Taste and adjust seasoning. Serve garnished with chopped parsley and a drizzle of lemon juice if desired.

Notes

Serve with crusty bread for a complete meal. This dish pairs well with grilled chicken or fish.
