- 4 pieces Chicken breasts
- 1/4 cup Olive oil

- 1 Cucumber (diced)
- 2 Tomatoes (diced)
- 1/2 Red onion (sliced)
- 1 Bell pepper (sliced)
- 3/4 cup Feta cheese (crumbled)
- 1 cup Tzatziki sauce
- 1 cup Quinoa or rice (optional, cooked)
Instructions
- Marinate the chicken by mixing olive oil, minced garlic, lemon juice, salt, and pepper in a bowl. Coat the chicken breasts and let sit for at least 30 minutes.
- Preheat the grill or oven. Grill or bake the marinated chicken until cooked through, about 6-7 minutes per side.
- While the chicken cooks, chop the cucumbers, tomatoes, red onion, and bell pepper. Cook quinoa or rice according to package instructions if using.
- Assemble each bowl with a base of quinoa or rice, topped with grilled chicken, fresh veggies, crumbled feta cheese, and a drizzle of tzatziki sauce. Serve immediately or store for meal prep.
