  • 1 zest of grapefruit
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour your cake pan.
  3. In a large mixing bowl, whisk together the flour, sugar, poppy seeds, baking powder, and salt.
  4. In another bowl, cream the softened butter until light and fluffy.
  5. Beat in the eggs one at a time.
  6. Stir in the grapefruit juice, zest, and vanilla extract.
  7. Gradually add the dry mixture into the wet ingredients.
  8. Pour the batter into the prepared cake pan.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
