Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour your cake pan.
- In a large mixing bowl, whisk together the flour, sugar, poppy seeds, baking powder, and salt.
- In another bowl, cream the softened butter until light and fluffy.
- Beat in the eggs one at a time.
- Stir in the grapefruit juice, zest, and vanilla extract.
- Gradually add the dry mixture into the wet ingredients.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For added flavor, consider topping with a citrus glaze made from powdered sugar and grapefruit juice, or serve with fresh whipped cream and grapefruit slices.
