Ingredients

  • 4 slices Sourdough bread
  • 2 Boneless, skinless chicken breasts
  • 4 tablespoons Pesto sauce
  • 1 Ripe tomato, thinly sliced
  • 1 cup Fresh arugula leaves
  • 4 slices Mozzarella cheese
  • 2 tablespoons Olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the grill by preheating your grill pan or skillet over medium heat.
  2. Spread pesto on one side of each slice of sourdough bread.
  3. Layer sliced grilled chicken over the pesto, followed by mozzarella cheese, and season with salt and pepper.
  4. Assemble the sandwich by adding tomato slices and arugula, then topping with another slice of bread, pesto side down. Brush the outside with olive oil.
  5. Grill the sandwich for 3-4 minutes on each side until the bread is crisp and the cheese is melted.
  6. Serve while warm and melty, sliced in half.

Notes

For a lighter version, substitute grilled turkey breast and whole-grain bread. Customize with roasted red peppers or avocado.
