- 4 slices Sourdough bread
- 2 Boneless, skinless chicken breasts
- 4 tablespoons Pesto sauce
- 1 Ripe tomato, thinly sliced
- 1 cup Fresh arugula leaves
- 4 slices Mozzarella cheese
- 2 tablespoons Olive oil
- Salt and pepper to taste
Instructions
- Prepare the grill by preheating your grill pan or skillet over medium heat.
- Spread pesto on one side of each slice of sourdough bread.
- Layer sliced grilled chicken over the pesto, followed by mozzarella cheese, and season with salt and pepper.
- Assemble the sandwich by adding tomato slices and arugula, then topping with another slice of bread, pesto side down. Brush the outside with olive oil.
- Grill the sandwich for 3-4 minutes on each side until the bread is crisp and the cheese is melted.
- Serve while warm and melty, sliced in half.
Notes
For a lighter version, substitute grilled turkey breast and whole-grain bread. Customize with roasted red peppers or avocado.
