Ingredients

  • 4 pieces Salmon fillets
  • 2 cups Fresh spinach
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Cream cheese, softened
  • 1 clove Garlic, minced
  • 1 tablespoon Olive oil
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the fresh spinach and cook until it wilts, about 2 to 3 minutes.
  4. Mix the sautéed spinach with the crumbled feta and cream cheese until well combined.
  5. Season your salmon fillets with salt and pepper, then make a slit in the center of each fillet to create a pocket.
  6. Stuff each salmon pocket with the creamy spinach and feta mixture.
  7. Place the stuffed salmon on a baking sheet lined with parchment paper.
  8. Bake for 15 to 20 minutes or until the salmon is cooked through.
  9. Serve with lemon wedges to squeeze over the top.
