- 4 pieces Salmon fillets
- 2 cups Fresh spinach
- 1/2 cup Feta cheese, crumbled
- 1/4 cup Cream cheese, softened
- 1 clove Garlic, minced
- 1 tablespoon Olive oil
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the fresh spinach and cook until it wilts, about 2 to 3 minutes.
- Mix the sautéed spinach with the crumbled feta and cream cheese until well combined.
- Season your salmon fillets with salt and pepper, then make a slit in the center of each fillet to create a pocket.
- Stuff each salmon pocket with the creamy spinach and feta mixture.
- Place the stuffed salmon on a baking sheet lined with parchment paper.
- Bake for 15 to 20 minutes or until the salmon is cooked through.
- Serve with lemon wedges to squeeze over the top.
