Gingerbread Lasagna is the perfect holiday dessert that combines flavorful layers of gingerbread cookies and creamy filling for a cozy treat.

Ingredients

  • 2 cups Gingerbread cookies
  • 8 oz Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 cup Vanilla pudding mix
  • 2 cups Milk
  • 1 tsp Vanilla extract
  • 1 cup Whipped cream
  • Ground cinnamon for garnish, to taste

Instructions

  1. Beat the cream cheese with powdered sugar in a mixing bowl until smooth, adding a pinch of nutmeg if desired.
  2. In another bowl, whisk the vanilla pudding mix and milk until thick, stirring in vanilla extract.
  3. Fold whipped cream into the cream cheese mixture until light and fluffy.
  4. Layer half of the gingerbread cookies in a rectangular dish, followed by half of the cream cheese mixture, then half of the pudding mixture. Repeat the layers.
  5. Top with whipped cream and sprinkle with ground cinnamon. Chill in the refrigerator for at least 4 hours before serving.

Notes

For a lighter version, consider using light cream cheese or Greek yogurt. You can also add chopped nuts or dried fruits for additional texture.
