Instructions
- Combine chopped rhubarb, sliced strawberries, granulated sugar, and cornstarch in a medium saucepan. Cook over medium heat until softened and thickened, about 10 minutes. Remove from heat and let cool.
- Beat heavy cream and vanilla extract in a large mixing bowl until soft peaks form.
- Beat softened cream cheese in another bowl until smooth, then fold in the whipped cream mixture.
- Layer the cooled fruit mixture in the prepared graham cracker crust, followed by the cream mixture, repeating layers until all ingredients are used, ending with a cream layer. Chill for 2-3 hours before serving.
