Ingredients

Instructions

  1. Combine chopped rhubarb, sliced strawberries, granulated sugar, and cornstarch in a medium saucepan. Cook over medium heat until softened and thickened, about 10 minutes. Remove from heat and let cool.
  2. Beat heavy cream and vanilla extract in a large mixing bowl until soft peaks form.
  3. Beat softened cream cheese in another bowl until smooth, then fold in the whipped cream mixture.
  4. Layer the cooled fruit mixture in the prepared graham cracker crust, followed by the cream mixture, repeating layers until all ingredients are used, ending with a cream layer. Chill for 2-3 hours before serving.
