- 1 Cucumber, sliced
- 1/4 Red onion, thinly sliced
- 1 Carrot, shredded
- 1/2 cup Feta cheese, crumbled
- 3 tablespoons Olive oil
- 2 tablespoons Balsamic vinegar
- Salt, to taste
- Pepper, to taste
Instructions
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrot. Mix well.
- Crumble feta cheese over the salad.
- Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl, then drizzle over the salad and toss gently to combine.
Notes
Dress right before serving to keep greens crisp. Store leftovers in an airtight container in the fridge for up to three days.
