A mouthwatering alternative to traditional pizza using eggplant as the base, topped with marinara, mozzarella, and Parmesan.

Ingredients

  • 2 Medium Eggplants
  • 1 cup Marinara Sauce
  • 2 cups Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the eggplants into 1/2 inch thick rounds and sprinkle with salt. Let sit for 20 minutes.
  2. Rinse the eggplant slices under cold water and pat dry.
  3. Line a baking sheet with parchment paper. Arrange the eggplant slices, spread marinara sauce, and top with mozzarella and Parmesan. Sprinkle with oregano, garlic powder, salt, and pepper. Bake for 25-30 minutes, or until the cheese is bubbly and golden. Garnish with fresh basil.
