- 2 Medium Eggplants
- 1 cup Marinara Sauce
- 2 cups Shredded Mozzarella Cheese
- 1/2 cup Grated Parmesan Cheese
- 1 teaspoon Dried Oregano
- 1 teaspoon Garlic Powder
- Salt and Pepper to taste
- Fresh Basil for garnish
Instructions
- Preheat your oven to 375°F (190°C). Slice the eggplants into 1/2 inch thick rounds and sprinkle with salt. Let sit for 20 minutes.
- Rinse the eggplant slices under cold water and pat dry.
- Line a baking sheet with parchment paper. Arrange the eggplant slices, spread marinara sauce, and top with mozzarella and Parmesan. Sprinkle with oregano, garlic powder, salt, and pepper. Bake for 25-30 minutes, or until the cheese is bubbly and golden. Garnish with fresh basil.
