- 1 pound Ground beef or turkey
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 Green bell pepper, chopped
- 1 Red bell pepper, chopped
- 1 can Diced tomatoes (canned)
- 1 can Tomato sauce
- 4 cups Beef or chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup Cooked rice
- Shredded cheese (optional for topping)
Instructions
- Brown the ground beef or turkey over medium heat for 5-7 minutes, draining excess fat.
- Add the chopped onion and minced garlic; sauté for 2-3 minutes until the onion is translucent.
- Stir in the chopped green and red bell peppers and cook for 5 minutes.
- Pour in diced tomatoes, tomato sauce, and broth; add Italian seasoning and season with salt and pepper. Bring to a boil, then simmer for 20-30 minutes.
- Stir in cooked rice and heat through for another 5 minutes.
- Serve hot, optionally topped with shredded cheese.
Notes
For a vegetarian option, replace the meat with lentils or beans. Customize with your favorite vegetables and toppings.
