Ingredients

  • 1 pound Ground beef or turkey
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Green bell pepper, chopped
  • 1 Red bell pepper, chopped
  • 1 can Diced tomatoes (canned)
  • 1 can Tomato sauce
  • 4 cups Beef or chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup Cooked rice
  • Shredded cheese (optional for topping)

Instructions

  1. Brown the ground beef or turkey over medium heat for 5-7 minutes, draining excess fat.
  2. Add the chopped onion and minced garlic; sauté for 2-3 minutes until the onion is translucent.
  3. Stir in the chopped green and red bell peppers and cook for 5 minutes.
  4. Pour in diced tomatoes, tomato sauce, and broth; add Italian seasoning and season with salt and pepper. Bring to a boil, then simmer for 20-30 minutes.
  5. Stir in cooked rice and heat through for another 5 minutes.
  6. Serve hot, optionally topped with shredded cheese.

Notes

For a vegetarian option, replace the meat with lentils or beans. Customize with your favorite vegetables and toppings.
