This smothered potatoes recipe is a Southern comfort classic, with creamy centers, crispy edges, and buttery caramelized onions.
Ingredients
2 lbs potatoes (Yukon Gold, Russet, or Red), sliced into ¼-inch rounds
2 tbsp butter
2 tbsp vegetable oil
1 large onion, thinly sliced
3 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional)
½ cup chicken or vegetable broth
Optional: 8 oz smoked sausage, ½ cup shredded cheese, ¼ cup heavy cream, ½ tsp Cajun seasoning, 1 tsp fresh thyme or rosemary
Instructions
Slice the potatoes into even ¼-inch rounds for even cooking.
(Optional) Soak Russet potatoes in cold water for 10 minutes to reduce starch.
Caramelize onions in 1 tbsp butter and 1 tbsp oil over medium heat until golden.
Add the remaining butter to the pan and layer the potato slices evenly.
Season with salt, pepper, paprika, and optional Cajun spice.
Pour in broth, cover with lid, and simmer over low heat for 15 minutes.
Uncover and increase heat to crisp the edges, stirring gently.
Serve hot, with or without optional add-ins like sausage or cheese.
Notes
For vegan version, use olive oil and vegetable broth. For extra creaminess, add a tablespoon of butter at the end and let it melt through the potatoes.
