A simple, flavorful dish combining cabbage, rice, and Mediterranean spices, perfect for quick weeknight dinners or meal prep.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 small head chopped cabbage
  • 1 cup white rice
  • 2 cups vegetable broth
  • 1 diced onion
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large pan over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  2. Stir in the chopped cabbage and cook until softened, about 5 minutes.
  3. Add the rice, oregano, broth, salt, and pepper to the pan. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and let simmer until the rice is cooked and has absorbed the liquid, about 15 to 20 minutes.
  5. Fluff the rice with a fork, adjust seasoning if necessary, and serve immediately with lemon wedges.

Notes

Ensure cabbage is well-coated in oil for better flavor. Use brown rice for added nutrition.
