Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (fresh or frozen)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, and salt.
  3. In another bowl, whisk together the milk, honey or maple syrup, eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until well incorporated.
  5. Gently fold in the mixed berries and cinnamon (if using).
  6. Pour the mixture into the prepared baking dish and spread it out evenly.
  7. Bake for 25 to 30 minutes, or until the top is golden and the mixture has set.
  8. Let it cool slightly before cutting into squares and serve warm.
