Instructions
- Crush chocolate sandwich cookies into fine crumbs and mix with melted butter.
- Press the mixture into a 9-inch pie dish and chill for at least 15 minutes.
- In a mixing bowl, beat cream cheese until smooth, then mix in powdered sugar and vanilla.
- Melt chocolate chips, let cool slightly, and fold into the cream cheese mixture.
- Gently incorporate whipped topping until smooth and creamy.
- Pour the filling into the chilled cookie crust and smooth the top.
- Chill in the refrigerator for at least 4 hours to set.
- Heat heavy cream until simmering and pour over semi-sweet chocolate chips, stirring until smooth to make ganache.
- Pour ganache over the filling and spread evenly.
- Top with shredded coconut and chopped pecans, and drizzle with melted chocolate if desired.
- Chill for another hour before slicing and serving.
Notes
For a chocolate mint flavor, add peppermint extract to the filling. Layer fresh fruit, like strawberries or bananas, on top for a refreshing contrast.
