Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth and creamy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually mix it into the wet ingredients until just combined.
- Fold in the chopped chocolate mint candy and chocolate chips.
- Drop spoonfuls of dough onto ungreased baking sheets, spacing them about two inches apart.
- Bake for 8–10 minutes until edges are set and centers remain soft.
- Let cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
