A creamy classic potato salad that’s perfect for picnics, barbecues, and gatherings, packed with flavor from tender potatoes, crunchy celery, and hard-boiled eggs.

Ingredients

  • Potatoes
  • Diced onion
  • Chopped celery
  • Hard-boiled eggs
  • White distilled vinegar
  • Mayonnaise
  • Yellow mustard
  • Pickle relish
  • Salt
  • Freshly cracked pepper
  • Sliced spring onions
  • Paprika

Instructions

  1. Scrub, peel, and cut the potatoes into one-inch cubes.
  2. Place the potato cubes into a large pot and cover them with water.
  3. Boil the potatoes over medium-high heat for approximately 10 minutes or until they are firm-tender.
  4. Drain the cooked potatoes and set them aside to cool.
  5. In a large mixing bowl, combine the cooled potatoes with the chopped onions and celery.
  6. Hard-boil the eggs, cool, and peel them. Chop the eggs and add them to the potato mixture.
  7. For the dressing, mix the vinegar, mayonnaise, yellow mustard, pickle relish, salt, and pepper in a small bowl, then combine it with the potato mixture.
  8. Mix in the sliced spring onions and sprinkle with paprika before serving.

Notes

Use chilled potatoes for the best texture. Substitute Greek yogurt for mayonnaise for a lighter option.
