- 4 cucumbers

Instructions
- Slice the cucumbers into rounds.
- Halve the cherry tomatoes and fresh mozzarella.
- Combine the sliced cucumbers, halved cherry tomatoes, fresh mozzarella, and basil leaves in a large bowl.
- Drizzle olive oil and balsamic vinegar over the top, then season with salt and pepper.
- Toss gently until well combined and serve chilled.
Notes
Chill before serving for the best taste. Can substitute mozzarella with feta for a tangy twist.
