Delightful cookies that combine the comforting flavors of classic pecan pie with the chewy goodness of cookies.

Ingredients

  • 1/2 cup softened Butter
  • 1/3 cup Vegetable or Canola Oil
  • 1/2 cup Granulated Sugar
  • 1/4 cup Powdered Sugar
  • 1 Egg (at room temperature)
  • 1 tsp Vanilla Extract
  • 1 3/4 cups All-purpose Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup Chopped Pecans

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add in the egg and vanilla extract and mix until fully incorporated.
  4. Add flour, salt, and baking powder, mixing until just combined.
  5. Form, using a large cookie scoop, nine equally sized cookie balls and gently flatten them to about an inch thick.
  6. Press down the center of each cookie to create a space for the pecan filling.
  7. Bake for 8-9 minutes or until edges are golden; centers will look underbaked.
  8. Allow to cool on the baking sheet before transferring to a wire rack to cool completely.

Notes

Consider adding chocolate chips or using maple syrup for a flavor twist. Serve warm with ice cream for a delightful dessert.
