- 1/2 cup softened Butter
- 1/3 cup Vegetable or Canola Oil
- 1/2 cup Granulated Sugar
- 1/4 cup Powdered Sugar
- 1 Egg (at room temperature)
- 1 tsp Vanilla Extract
- 1 3/4 cups All-purpose Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1 cup Chopped Pecans
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
- Add in the egg and vanilla extract and mix until fully incorporated.
- Add flour, salt, and baking powder, mixing until just combined.
- Form, using a large cookie scoop, nine equally sized cookie balls and gently flatten them to about an inch thick.
- Press down the center of each cookie to create a space for the pecan filling.
- Bake for 8-9 minutes or until edges are golden; centers will look underbaked.
- Allow to cool on the baking sheet before transferring to a wire rack to cool completely.
Notes
Consider adding chocolate chips or using maple syrup for a flavor twist. Serve warm with ice cream for a delightful dessert.
