- 2 pounds Chicken breasts
- 2 cups Corn (frozen or canned)
- 8 ounces Cream cheese
- ½ cup Cotija cheese
- 1 cup Chicken broth
- 2 tablespoons Lime juice
- 1 tablespoon Chili powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- Cilantro (for garnish) to taste
Instructions
- Layer the chicken breasts at the bottom of the crockpot.
- Add the corn, cream cheese, cotija cheese, chicken broth, lime juice, chili powder, salt, and pepper on top.
- Stir gently to combine all the ingredients, making sure everything is evenly distributed.
- Cover and cook on low for 6-8 hours or high for 3-4 hours. Once done, shred the chicken and mix with the sauce before serving.
Notes
For added flavor, use fresh lime juice instead of bottled and feel free to experiment with spices.
