Crockpot Street Corn Chicken combines the rich flavors of street corn with tender chicken for a creamy, comforting dish.

Ingredients

  • 2 pounds Chicken breasts
  • 2 cups Corn (frozen or canned)
  • 8 ounces Cream cheese
  • ½ cup Cotija cheese
  • 1 cup Chicken broth
  • 2 tablespoons Lime juice
  • 1 tablespoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • Cilantro (for garnish) to taste

Instructions

  1. Layer the chicken breasts at the bottom of the crockpot.
  2. Add the corn, cream cheese, cotija cheese, chicken broth, lime juice, chili powder, salt, and pepper on top.
  3. Stir gently to combine all the ingredients, making sure everything is evenly distributed.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours. Once done, shred the chicken and mix with the sauce before serving.

Notes

For added flavor, use fresh lime juice instead of bottled and feel free to experiment with spices.
