Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1 cup Peanuts
  • 1 cup Chicken broth
  • 2 tablespoons Soy sauce
  • 1 tablespoon Peanut butter
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • Salt and pepper to taste
  • Green onions (for garnish, optional)

Instructions

  1. Start by placing the chicken breasts in the bottom of your crockpot.
  2. In a bowl, mix the chicken broth, soy sauce, peanut butter, minced garlic, and ginger.
  3. Pour the mixture over the chicken breasts and sprinkle the peanuts on top.
  4. Cover the crockpot and set it to low for 6 to 8 hours or high for 3 to 4 hours.
  5. Once cooked, shred the chicken using two forks and mix it well with the sauce.
