- 1 pound Carrots
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 tablespoon Butter, melted
- Fresh herbs (optional) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots. If using large carrots, cut them in half for even cooking.
- Boil the carrots in salted water for about 10 minutes until tender. Drain and let cool slightly. Smash the carrots on a baking sheet.
- Drizzle with olive oil and melted butter. Sprinkle with minced garlic, salt, and pepper.
- Roast in the preheated oven for about 20–25 minutes until golden brown and crispy. Serve warm.
Notes
Garnish with fresh herbs before serving for an added touch. For dairy-free, use a vegan butter alternative.
