A delightful twist on a familiar favorite, these crispy smashed carrots are bursting with flavor and easy to make.

Ingredients

  • 1 pound Carrots
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 tablespoon Butter, melted
  • Fresh herbs (optional) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots. If using large carrots, cut them in half for even cooking.
  3. Boil the carrots in salted water for about 10 minutes until tender. Drain and let cool slightly. Smash the carrots on a baking sheet.
  4. Drizzle with olive oil and melted butter. Sprinkle with minced garlic, salt, and pepper.
  5. Roast in the preheated oven for about 20–25 minutes until golden brown and crispy. Serve warm.

Notes

Garnish with fresh herbs before serving for an added touch. For dairy-free, use a vegan butter alternative.
