  • 3 cups crunchy arugula
  • 3 cups crunchy spinach
  • 1/4 cup rich olive oil
  • 2 tbsp tangy apple cider vinegar
  • 1 tbsp sharp mustard
  • 1 tsp fine salt
  • 1/2 tsp freshly cracked pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cube the golden potatoes into bite-sized pieces, then toss them with olive oil, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet and roast for 25 to 30 minutes until crispy and golden.
  4. While the potatoes roast, prepare the dressing by mixing fresh herbs with olive oil, apple cider vinegar, mustard, salt, and pepper in a bowl.
  5. Once the potatoes are done, let them cool for a few minutes, then combine them with the crunchy arugula and spinach.
  6. Drizzle the dressing over the salad, toss gently to combine, and serve.
