- 8 pieces bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 2 tablespoons fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil or parchment paper.
- Pat the chicken thighs dry with paper towels and place them on the prepared baking sheet, spacing them out evenly.
- In a small bowl, mix olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano to create a seasoning blend. Brush or drizzle olive oil over each chicken thigh and coat with the seasoning mix.
- Bake the chicken thighs in the preheated oven for 35 to 45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
For a lower fat option, consider removing the skin before baking. These thighs can also be paired with roasted vegetables or served over rice or quinoa.
