  • 8 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil or parchment paper.
  2. Pat the chicken thighs dry with paper towels and place them on the prepared baking sheet, spacing them out evenly.
  3. In a small bowl, mix olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano to create a seasoning blend. Brush or drizzle olive oil over each chicken thigh and coat with the seasoning mix.
  4. Bake the chicken thighs in the preheated oven for 35 to 45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.
  5. Remove from the oven and let rest for 5 minutes before serving.

Notes

For a lower fat option, consider removing the skin before baking. These thighs can also be paired with roasted vegetables or served over rice or quinoa.
