- 1 lb Ground beef
- 1 can Black beans (rinsed and drained)
- 1 can Corn (drained)
- 1 can Diced tomatoes with green chilies
- 1 cup Beef broth
- 1 cup Heavy cream
- 1 packet Taco seasoning
- Salt and pepper to taste
- Cheese for topping (as desired)
- Green onions for garnish (as desired)
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat.
- Add black beans, corn, diced tomatoes, beef broth, and taco seasoning to the pot. Stir well.
- Bring the mixture to a gentle simmer and cook for about 10 minutes.
- Stir in the heavy cream and season with salt and pepper. Heat through for an additional 5 minutes.
Notes
Customize with toppings like avocado, sour cream, or cilantro. For a vegetarian version, use extra beans and omitting the beef.
