- 8 oz Pasta of your choice
- 1 tbsp Olive oil
- 1 lb Diced chicken breast
- 1 cup Canned pumpkin puree
- 1 cup Heavy cream
- 1 cup Chicken broth
- 1 tsp Garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh parsley for garnish
Instructions
- Begin by boiling water in a large pot. Add your pasta of choice and cook according to package instructions. Once al dente, drain and set aside.
- In a large skillet over medium heat, heat the tablespoon of olive oil. Add the diced chicken, seasoning it with salt and pepper. Cook until golden brown and thoroughly done, about 7-10 minutes.
- Next, stir in the pumpkin puree, heavy cream, chicken broth, garlic powder, and Italian seasoning. Bring the mixture to a gentle simmer, letting it cook for about 5 minutes.
- Add the drained pasta back into the skillet, tossing to coat it thoroughly in the cream sauce. Adjust seasoning to your liking, and serve hot, garnished with grated Parmesan and a sprinkle of fresh parsley.
Notes
For a vegetarian version, replace chicken with sautéed mushrooms, spinach, or chickpeas. Serve alongside warm garlic bread or a crisp garden salad.
