Ingredients

  • 8 oz Rice Noodles
  • 1 lb Chicken Breast, sliced
  • 1 cup Mixed Vegetables (bell peppers, carrots, broccoli)
  • 1/2 cup Creamy Peanut Butter
  • 1/4 cup Soy Sauce
  • 2 tbsp Honey or Sugar
  • 2 tbsp Lime Juice
  • 1 clove Garlic, minced
  • 1 tsp Ginger, minced
  • Oil for cooking, as needed
  • Chopped Peanuts and Cilantro (for garnish), as desired

Instructions

  1. Start by cooking the rice noodles according to the package instructions. Once done, drain them and set aside to cool while you prepare the other components of the dish.
  2. In a large pan, heat a suitable amount of oil over medium heat. Add the sliced chicken and cook, stirring frequently, until the chicken is browned and cooked through, generally taking around 5 to 7 minutes.
  3. Once the chicken is thoroughly cooked, add the mixed vegetables to the pan. Sauté until the vegetables are tender, which should take another 3 to 5 minutes.
  4. Next, whisk together the creamy peanut butter, soy sauce, honey or sugar, lime juice, minced garlic, and minced ginger in a separate bowl. Pour the sauce into the pan with the chicken and vegetables, stirring until well combined.
  5. Lastly, fold in the cooked rice noodles, ensuring they are evenly distributed within the sauce. Mix well and let everything warm through for a couple of minutes. Serve hot garnished with chopped peanuts and fresh cilantro.

Notes

Feel free to switch the chicken with tofu for a vegetarian option, and adjust cooking times as necessary. This dish can be made gluten-free by using gluten-free soy sauce and rice noodles.
