  • 2 cups Mashed Potatoes

  • 2 Eggs
  • 1/2 cup Milk
  • Salt and Pepper to taste
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Dried Thyme (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a skillet, heat olive oil over medium heat. Add chopped leeks and sauté until soft and fragrant.
  3. Add ground mince to the skillet, season with salt, pepper, garlic powder, onion powder, and thyme. Cook until browned.
  4. Combine the leek and meat mixture with mashed potatoes, shredded cheese, beaten eggs, and milk in a large bowl; mix until thoroughly combined.
  5. Spoon the mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 25-30 minutes or until golden and a toothpick inserted comes out clean. Let cool before serving.
