- 1 package Gnocchi
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 3 Carrots, diced
- 2 Celery stalks, diced
- 2 cups Vegetable broth
- 1 cup Heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh spinach (optional) as desired
- Parmesan cheese for serving (optional) as desired
Instructions
- In a large pot, heat the olive oil over medium heat. Once the oil is shimmering, add the chopped onion and minced garlic, sautéing until fragrant and golden, about 2-3 minutes.
- Add the diced carrots and celery to the pot, cooking until they become tender, roughly 5 minutes.
- Pour in the vegetable broth, bringing it to a boil. After the broth has boiled, add the gnocchi and cook according to the package instructions, usually about 2-3 minutes.
- Stir in the heavy cream and Italian seasoning. Season with salt and pepper to taste. If desired, fold in fresh spinach, cooking until just wilted.
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days. Best enjoyed fresh.
