Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, combine flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, fresh orange juice, and zest until combined.
  6. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  7. Fold in fresh cranberries.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool in the pan for 10-15 minutes, then transfer to a wire rack.
  11. For the glaze, whisk together powdered sugar and orange juice until smooth, then drizzle over the cooled cake.
