  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter (melted)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the fresh cranberries to the pan and cook, stirring occasionally, until they start to soften and burst, about 5 minutes.
  4. Stir in the honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper. Cook for another 3-4 minutes until the mixture thickens slightly.
  5. Remove from heat and let cool slightly.
  6. Cut a pocket in each chicken breast, being careful not to slice all the way through.
  7. Stuff each breast with brie and a portion of the cooled cranberry mixture.
  8. Secure the openings with toothpicks.
  9. Heat a large oven-safe skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown.
  10. In a small bowl, combine panko breadcrumbs and melted butter, then spread evenly over the chicken.
  11. Return the chicken to the skillet and transfer to the oven. Bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  12. Once done, let the chicken rest for 5 minutes before serving. Garnish with chopped parsley.
