This comforting Crack Breakfast Casserole is packed with sausage, eggs, cheese, and hash browns, perfect for meal prep, weekend brunches, or busy mornings. It’s rich, cheesy, and easy to customize with your favorite add-ins.
Ingredients
1 lb cooked, crumbled breakfast sausage
2 cups shredded cheddar cheese (divided)
6 large eggs
2 cups milk (whole or 2%)
1 packet (1 oz) ranch dressing mix
1 package (28 oz) frozen hash browns, thawed
1/2 cup diced bell peppers (optional)
1/4 cup chopped green onions
1/2 tsp garlic or onion powder (optional)
Hot sauce (optional)
Instructions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Spread thawed hash browns into the dish. Press lightly for an even base.
Sprinkle cooked sausage evenly over the potatoes.
Add 1½ cups cheddar cheese on top of the sausage layer.
In a bowl, whisk eggs, milk, and ranch dressing mix until smooth.
Pour egg mixture over the casserole and tap dish to settle.
Top with remaining ½ cup cheese.
Bake uncovered for 40–45 minutes until golden and set.
Cool for 5–10 minutes before slicing and serving.
Notes
Can be prepped the night before and baked fresh in the morning. Store leftovers covered in the fridge up to 4 days or freeze up to 2 months. Reheat in microwave or oven.
