Ingredients

  • 3 cups Crab mushrooms or enoki mushrooms
  • 3 large Eggs
  • 50 ml Water or milk
  • 3 tbsp Cooking oil
  • 2 tbsp Light soy sauce
  • 1/2 tbsp Dark soy sauce
  • Black pepper to taste
  • 1 tbsp Starch
  • 2 cups Steamed rice
  • Chopped green onions for garnish

Instructions

  1. Begin by beating together the three eggs along with 50 ml of water or milk until they are well combined.
  2. In a skillet, heat two tablespoons of cooking oil over medium heat, then add the crab mushrooms. Stir-fry until they soften, about 3-4 minutes. Add soy sauces and black pepper, tossing well to coat.
  3. Add the starch dissolved in a small amount of water to the mushrooms, stirring until the sauce thickens.
  4. In a clean pan, heat the remaining cooking oil and pour in the egg mixture. Gently push the eggs toward the center as they cook, until just set.
  5. Serve hot steamed rice topped with the silky eggs, mushroom sauce, and garnish with green onions.

Notes

For a vegetarian option, substitute eggs with silken tofu. Add chili flakes for spice if desired.
