- 1 pound Lean ground turkey
- 1 can Black beans, drained and rinsed
- 1 can Kidney beans, drained and rinsed
- 1 can Diced tomatoes
- 1 cup Corn kernels (fresh, frozen, or canned)
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 tablespoons Chili powder
- 1 teaspoon Cumin
- 1 teaspoon Smoked paprika
- Salt and pepper, to taste
- 2 cups Chicken broth
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- Combine the ground turkey, black beans, kidney beans, diced tomatoes, corn, diced onion, minced garlic, chili powder, cumin, and smoked paprika in a slow cooker. Season with salt and pepper to taste.
- Pour in the chicken broth and stir until everything is well combined.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours until the turkey is cooked through and flavors have melded.
Notes
This recipe is gluten-free and can easily be made vegetarian by using more beans or diced vegetables. Enhance the flavors with fresh cilantro or lime juice.
