Ingredients

  • 1 pound Lean ground turkey
  • 1 can Black beans, drained and rinsed
  • 1 can Kidney beans, drained and rinsed
  • 1 can Diced tomatoes
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • Salt and pepper, to taste
  • 2 cups Chicken broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Combine the ground turkey, black beans, kidney beans, diced tomatoes, corn, diced onion, minced garlic, chili powder, cumin, and smoked paprika in a slow cooker. Season with salt and pepper to taste.
  2. Pour in the chicken broth and stir until everything is well combined.
  3. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours until the turkey is cooked through and flavors have melded.

Notes

This recipe is gluten-free and can easily be made vegetarian by using more beans or diced vegetables. Enhance the flavors with fresh cilantro or lime juice.
