Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs and melted butter, then press firmly into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add sour cream and brewed coffee, mixing until combined.
- Add eggs and vanilla extract, mixing until thoroughly incorporated for a smooth batter.
- Pour the cheesecake batter over the crust and bake for about 55-60 minutes, until the center is set.
- Let the cheesecake cool completely, then refrigerate for at least 4 hours or overnight before serving.
