Instructions

  1. Preheat and prepare: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  2. Mix dry ingredients: In a large mixing bowl, whisk together flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. Combine wet ingredients: In another bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
  4. Make the muffin batter: Pour the wet mixture into the dry ingredients and gently stir until just combined. Do not overmix.
  5. Prepare streusel topping: In a small bowl, mix flour, brown sugar, and cinnamon. Add cold butter and use fingers or pastry cutter to create a crumbly texture.
  6. Fill and top the muffins: Fill muffin cups two-thirds full with batter and sprinkle the streusel topping generously over each.
