Instructions
- Preheat and prepare: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
- Mix dry ingredients: In a large mixing bowl, whisk together flour, granulated sugar, baking powder, salt, and ground cinnamon.
- Combine wet ingredients: In another bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
- Make the muffin batter: Pour the wet mixture into the dry ingredients and gently stir until just combined. Do not overmix.
- Prepare streusel topping: In a small bowl, mix flour, brown sugar, and cinnamon. Add cold butter and use fingers or pastry cutter to create a crumbly texture.
- Fill and top the muffins: Fill muffin cups two-thirds full with batter and sprinkle the streusel topping generously over each.
- Bake: Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let muffins cool for 5 minutes in the pan, then transfer to a wire rack to cool completely before serving.
