Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 2 cups rhubarb, chopped
  • 1/2 cup sugar
  • 1/2 cup sliced almonds
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. In a large bowl, mix together the all-purpose flour, salt, and sugar until combined.
  2. Add the chilled, cubed butter and mix until crumbly.
  3. Gradually add the ice water until the dough holds together.
  4. Wrap the dough in plastic and refrigerate for about 30 minutes.
  5. Preheat your oven to 375°F (190°C).
  6. In another bowl, combine the chopped rhubarb, sugar, cornstarch, and vanilla extract.
  7. Roll out the chilled dough on parchment into a circle, about 10-12 inches in diameter.
  8. Place the rhubarb mixture in the center of the dough, leaving a border around the edges.
  9. Fold the edges over the filling to create a rustic look.
  10. Beat the egg and brush it over the edges, then sprinkle sliced almonds on top.
  11. Bake for 35-40 minutes until golden brown and bubbly.
  12. Allow to cool slightly before serving.

Notes

Serve warm or at room temperature. Top with ice cream or whipped cream for an indulgent treat.
