- 1 1/2 cups all-purpose flour

- 1/2 cup unsalted butter, chilled and cubed

- 2 cups rhubarb, chopped

- 1/2 cup sliced almonds
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- In a large bowl, mix together the all-purpose flour, salt, and sugar until combined.
- Add the chilled, cubed butter and mix until crumbly.
- Gradually add the ice water until the dough holds together.
- Wrap the dough in plastic and refrigerate for about 30 minutes.
- Preheat your oven to 375°F (190°C).
- In another bowl, combine the chopped rhubarb, sugar, cornstarch, and vanilla extract.
- Roll out the chilled dough on parchment into a circle, about 10-12 inches in diameter.
- Place the rhubarb mixture in the center of the dough, leaving a border around the edges.
- Fold the edges over the filling to create a rustic look.
- Beat the egg and brush it over the edges, then sprinkle sliced almonds on top.
- Bake for 35-40 minutes until golden brown and bubbly.
- Allow to cool slightly before serving.
Notes
Serve warm or at room temperature. Top with ice cream or whipped cream for an indulgent treat.
